Hey Jeff; A while back someone published a single study showing that people who at salads with an oil based dressing absorbed more caretonoids (sp?) than people who ate vegetables with fat free sauces. What is your opinion about the necessity of eating vegetables with a fat source? Is it necessary or is it optimal? If it is either do reduced fat sauces ( ie 30 calories per serving instead of 80 calories ) provide enough fat? Have their been more studies backing this claim up or refuting it?
