Hi Jeff, I have been reading the work of Drs. Fuhrman and Esselstyn, both of which forbid added oil. On the topic of salad dressing, Dr. Fuhrman recommends making dressing from nut butters to assist in the absorption of fat-soluble vitamins in the greens. Dr. Esselstyn does not seem to share this concern and pretty much forbids nuts. I was thinking that if a food contains nutrients, they should be able to be absorbed without help from other foods. What do you think?
