All grains include Alkylresorcinols, Alpha-amalase inhibitors and protease inhibitors Lectins and Phytates.

Alkylresorcinols: Alkylresorcinols, a phenolic lipid present in the outer parts of wheat and rye kernels lowers the growth rate in animals and have been shown to stimulate increased production of platelet thromboxane, which promotes inflammation and cause pancreatic overactivity. They also cause red blood cells to break open and DNA strads to split.

Protease inhibitors: Protease inhibitors are prominent in all grains in legumes inhibit the activity of digestive enzymes that help break down protein which helps to cause pancreatic stress.

Lectins: Lectins, the glycoprotein (which are proteins with carbohydrates attached to them) are considered the major anti-nutrient of food. They clump with red blood cells and can bind and interact with every single cell in the body. This means that they have a high potential to interfere with the body's normal hormonal balance, metabolism and health if they breach the protective barrier of the gut wall and enter the bloodstream.

Alpha-amylase inhibitors: Alpha-amylase inhibitors inactivate the breakdown of starch into sugars and causes hypersensitivity.

Phytates: Phytates bind to minerals such as iron, calcium and zinc making them unavailable for absorption. So all those veggies you are eating aren't getting fully absorbed through your digestive system because of these.

Even though bread and grains and legumes are nutrient dense, the bottom line is that these inhibitors and blockers will prevent the nutrients from being fully absorbed into the body causing malnutrition. You're better off eating food that lowers your inflammation level and balances your hormones and your Omega 3 to Omega 6 ratios which includes fatty fish. If you are doing this for health reasons, then on a long term basis, you will do more harm to your body than help. On a short term basis, I hope you get to your goal. However if you are doing this for political reasons, then more power to you.
