I have no problem with using the DRI/RDA as defaults.
Vitamin B12 is not in plant foods so I would uncheck it and same with Vitamin D as the main source is sunlight. Sodium should be set with 2300 as the upper limit and 350-500 as the minimum. I would set the limit on saturated fat to no more than 7% of your caloric target and set cholesterol at somewhere around 0 to 25 to 50 at the upper end. Trans fat should be zero.
While there is some evidence that calcium, zinc, vitamin e would be different on a low fat low sodium adequate protein plant based diet, you could still leave them to see how you do.
