Subject:	Are shredded raw potatoes edible?

I was recently making some soup with shredded potatoes. I had some extra of
the shredded potatoes and gave them a try. I thought they were very tasty with
a nice crunch to them. They seemed a little like celery or radish. I didn't have
any side effects.

I always thought potatoes had to be cooked, but I don't know why.

Any reason not to eat raw potato, or shredded raw potato?
