I see no reason at all why it would not be "safe" for anyone with an immune disease to follow a healthy diet. Remember, I am a health advocate and not a vegan/veg diet advocate as they are not always one and the same. I also see no reason why a veg version of a healthy diet would not be appropriate for someone with HIV and may even be beneficial.
