Hi Jeff, After roasting a batch of yams, I placed them in a bowl in the frig so I can snack on them latter. After a couple of days I noticed a syrupy dark puddle under the yams. I tasted it and couldn't believe the sweet taste. Sweeter than molasses. Is it OK to consume this syrup at one time or is it concentrated with sugars with would cause Glycemic Index issues. Thanks.
