Hi Jeff, I've been recently reading some articles which state that conversion of beta-carotene to retinol (Vit A) is quite bad and some sources even suggest that vegetarians/vegans who do not consume dairy or meat might not get enough. For example this Article "Key Nutrients vis-a-vis Omnivorous Adaptation and Vegetarianism (cont.)" (see section "Bioavailability of beta-carotene") cites some studies which show the "bad" bioavailability of beta-carotene (couldn't find any better english language reference quickly). Would be interessted to hear your opinion this "issue". Regards George
