Hi. You asked a good question. I too had a great deal of bloating and PAIN when I consumed rice and also beans. I checked with some other sources (this was last year after 30 years as a vegan) and what helped was this (And I feel healthier for it.) I presprout(through soaking) all grians and beans before consumption. Rice I soak at least 24 hrs (In distilled water) Beans contigent upon size up to three days. Also I find if I center on fermented grains and beans (Miso primarily) that I have better digestion. Also I keep my portions small. You stated that you have begun to eat potatoes? My experince with the family of Nightshade (tomatoes potatoes eggplant peppers) are detrimental to health. I experienced arthiritic pain for years and when I began to eliminate tand hen finally cut out that those food sources my joints no longer hurt (This I did while also fasting one day a week on water and vegetable juice)
