As nuts/seeds are high fat foods, it is better that they are consumed "raw" as heating fats can create some potentially toxic chemicals.

However, if someone was to consume them heated, I would recommend dry roasted and unsalted and keep them to a minimum.

Most nuts and seeds are lower in saturated fat and they do not contain cholesterol, so they are not likely to raise someones cholesterol or LDL levels. However, some nuts, like the coconut, are very high in saturated fat and I would recommend avoiding it.
