Hi Jeff, From one of the leader's of the raw food movement: "Heating proteins results in the formation of enzyme-resistant bonds, making their digestion all but impossible." I'd like to know if there's any evidence that proteins are damaged when we heat (plant-based) foods. I'm specifically referring to the less damaging processes like (water) boiling or steaming--and low to moderate heat baking--not barbecuing, frying, or any other high heat cooking or baking.
