OMG!!! Sorry for the language but you will go crazy if you keep calculating this way what you eat.
Those numbers that you go on and on represent your vitamin intakes but not what your body assimilates.
I have some advices for you so that you will surely get everything your body needs through your food (by the way human bodies are designed to do that).
At breakfast eat some whole cereals, I eat musli - a mix of 5 cereals (wheat, corn, rye, oats, barley), dried fruits (raisins, currants, bananas, pineapples, papayas, coconuts, apples, plums, apricots) and seeds (flax, nuts, sunflower). And all these ingredients are either whole or grinded to a certain degree. I put in a bowl musli, in the evening, and some water, so the cereals absorb it and swell and are easier to eat. In the morning I eat a bowl of this mix and drink a 700ml mug of tea(made from several plants).
At lunch I eat something cooked and in the evening(4-5 hours before I go to sleep) a vegetables salad.
Very important!!! Nothing between(just fruits).
Now I'm not saying that I do this all the time, but I eat musli everyday and in rest I'm trying to stick to the plan.
I hope this helps and clears all those numbers inside of your head and makes you realize that you must eat this way(and for the rest of your life) for a long time before you see results.
