Wow, looks like the long-lived Okinawans consume a lot more tofu and soy than in Japan, China, or elsewhere. Surprised to find that according to the 1996 statistics bureau report, each household consumes 2-3 pounds of tofu per week -- and that's not including any other soy that they're eating. At least in Okinawa, soy appears to be more than a garnish. I guess there are good arguments for and against soy, but perhaps no good argument for consuming huge amounts of it!
