I have come up w/ an easy and great-tasting ice cream made w/ plain coconut milk (from a can), frozen orange juice concentrate from the can and a granular sugar (I've used fructose from a health food store). Add a dab of vanilla and whip it w/ a beater/blender until the sugar is dissolved. I add the sugar "to taste", but it takes probably between 1/2 to 1 C. When done freezing (I freeze them in coconut shells) it comes out tasting like a creamsicle. You can use frozen pineapple in place of orange for a pina colada dessert. TRY it...it's great!
