I highly recommend using Vances DariFree powdered milk substitute for any cooking that needs to be milk and soy free. Its derived from potatoes.
Here is a recipe that I recently experimented with using - It is not as creamy as I want it to be, so it needs a little tweaking. However, The flavor is really good though and it worked great in the ice cream maker.
Vanilla Vance's Ice Cream
9 tablespoons powdered Vances DariFree
3 tablespoons tapioca starch or arrowroot
6 tablespoons of sugar
3 cups of water
3 tablespoons of margarine, butter or substitute of choice (I used Fleischmanns Light in the tub)
2 teaspoons of vanilla extract (or can use real vanilla bean)
Mix dry ingredients in a pot. Add the water and turn on medium/medium high heat. Whisk the mixture frequently to prevent clumping or sticking to the pan. When the mixture begins to bubble add the margarine and vanilla extract. Stir until dissolved and remove pot from heat. Refrigerate the mixture until completely cold. Add to ice cream maker per instructions. Make about a quart of ice cream.
