Have you tried mixing a banana into the mix to congeal it so that the almond milk doesn't separate? My husband and I have made many smoothies with the almond milk but have never tried to freeze it. But I think it may freeze better if it is mixed with a starch to give it a more creamy texture.This maybe why Rice Dream Ice Cream is so good. You could also try mixing tapioca to thicken it. Also I just saw a new product called Oat milk that may work in place of rice milk or almond milk. Another great but fattening thickener is coconut milk. Sometimes if you just play around with thickening agents you can get pretty close to what your looking for.
