I haven't tried it myself, but I have heard great things about spectrum's organic shortening. You can contact them to verify on cross-contamination issues and to purchase directly - spectrumorganics.com. It is made only with Palm oil. I use mostly extra-light olive oil in baking, including for things like cookies. Use 1/2 to 3/4 the amount of oil that you would have used of margarine or butter. Extra Light (not extra virgin!) has virtually no taste, and it has a fairly high smoke point, making it a versatile oil for cooking and baking. Everyone seems to love my cookies, so it must work okay!
