Try banana-peanut butter shakes. You can blend the two ingredients along with some rice milk or soy milk, and maybe some fruit juice. Use a fattier soy milk if you're worried about fat intake.

Actually, nut butters are pretty easy to add to lots of foods in a more liquid form - like maybe add it along with some soy milk to the cream of wheat or oatmeal, and blend it all together. Likewise, you can also add some soy margarine to a warm cereal to add fat.

I'm trying to think of other plant-based fats to add, but I can't imagine drinking guacamole through a straw...

Come to think of it, coconut or palm oil could be a good solution as well, to add to a smoothie.
