As far as "milk" goes, he could have rice milk. I personally am not crazy about rice milk but rice is much less allergenic than the others. You might also try almond milk, I love Almond Breeze almond milk which I buy by the case because the local HFS doesn't stock it. You should get Jo Stepaniak's book The Uncheese Cookbook and the Ultimate Uncheese cookbook. There are many recipes in there for homemade "cheese" which do not use soy. You might also try Melty Pizza Cheese, which is an excellent soy-free recipe by Bryanna Grogan, New Veggies. I have found it to work well for kids that are used to cow cheese, I use it for quesadillas, pizza, and grilled cheeze sandwiches. Not sure about butter, most non-hydrogenated margarines such as Earth Balance may contain soy, you might want to go to HFS and check some labels. Whatever you get be sure it's non-hydrogenated, that being a really bad fat. Hope this helps some.
