I watched a show on the food network a few nights ago about a girl starting a pizza business that centers it around dairy intolerences, and thats where I first heard about rice cheese. I can't quite figure out how I missed rice cheese before, but I have been extatic about it ever since I hear that. Hope it works out well, and good luck.
