Robin, Mother's margarine (distributed by R.F.D., INC. , NEWARK, N.J. 07105) is the only margarine I have found that does not have trace amount of soy or dairy. It is firmer that soy based margarine but tastes fine. Coconut oil, which is solid below 76 degrees is a good shortening substitute. I am still experimenting with this as it is more solid than shortening. Enriched rice milk is a good substitute on cereal and in recipes. It is sweeter than cow's milk so I increase the salt in many recipes. Chicken broth is great is mashed potates. Before we discovered Mother's margarine, we made mashed potatoes with chicken broth and coconut oil, rice milk and extra salt. It was quite good. I tell my little boy that some foods are Mikey-friendly. Others are not. Certain corn and potato chips are okay and others are not. It's just finding good substitutes that make things easier. Also, trying not to eat things that he cannot eat in front of him makes it easier. When we have ice cream, he has rice dream. We call it rice-cream. I know it seems hard to cope with these allergies. It's easier to adjust to new tastes when a child is young. Rice milk is what our little boy likes. Laurie
