I had a few thoughts for you:

have you tried goat's milk and cheeses made from this...if this works, you should be able to make your own yogurt from goat's milk also. (i knew some one who's baby sister was intolerant to dairy, but could tolerate Goat milk products...go figure...)

also there is always almond and other nut "milks" and grain "milks" too. You can make them yourself-especially rice milk...you can find recipes for this on the web.

Of course there is always eggs

Nuts and seeds (such as pumpkin and sunflower) try sprouted seeds also.

don't forget your whole grains: amaranth, quinoa, millet, barley, buckwheat, brown rice, corn, kamut, oats, rye, wheat, etc....most pasta also carries a moderate amount of protein--about 4g per serving.

also some veggies are higher in protein than others. here's a link that will give you more info on the proteins found in certain foods.

We also live in a rural area, so I know how hard it can be to find some of the things(especially the grains) listed. We often buy from a food co-op in our area. This site lists different co-ops by state:
