Let's see .... I LOVE the Havarti Spread (pg 48), the Tangy Chedda Sauce (pg 69), Noodles Ramona (pg 95), Classic Quiche (spinach variation) page 102, baked Macaroni and Cheese (page 113), Grilled Cheeze Sandwiches (page 141). Also, if you can come across "Diet for a New World" by John Robbins he's got a couple great "cheese" sauces in there. One that I use for pizza and lasagna all the time (Tofu Cheese Sauce) and a great dip type of spread for crackers and chips (No-Cheese Spread).
