Gluten is the protein in wheat, barley, and rye. Most rice is fine but some types of rice like instant rices are processed with wheat and must be avioded. Most Oats(20-30%) are contamined at the farm or processing level with wheat and must be avoided. I am a wheat farmer with celiacs sprue so I am familiar with what is happening. I am also dairy-free and night-shade free. I am also vegan and legume-free. My wife makes rice biscuits and Millet bread for me. When I heard your daughter has this my heart went out to you. There is help out there and lots of it. WWW.celiac.com sells cookbooks for celiacs. WWW.finerhealth.com has helped me find all of the foods that give me problems. He has an online lecture that list 14 foods to avoid. Avoiding some of these may help more. WWW.gluten.net is the web site for the Gluten Intolerence Group and the have a yearly conference. 2005's conference is in June in Chicago area.

The sooner she starts the diet the less problems she will have in the long run. It sounds like you have a good doctor. Make sure she has celiac sprue now. It is very difficult to follow the diet for a lifetime unless you are certain you have the condition.
