A better alternative is to make your own cheese alternates, if I were you I'd buy Jo Stepaniak's uncheese and/or ultimate uncheese cookbook, they contain lots of recipes using beans as a base, there is also a recipe for melty pizza cheese which has nutritional yeast in it and water but no almond or soy, Bryanna on new veggies has that recipe. It's good for quesadillas, nachos, mexican food, makes good grilled cheeze sandwiches too.

You might try making the garbanzo bean tofu posted below and using that as a base for some of the other uncheese recipes that use tofu as a base, such as the highly delectable crock cheeze from Vegan Vittles. That might be a whole new interesting twist . . .

P. S. For sandwiches, avocadoes sub nicely for cheese.
