Don't know anything about fat content, I'm assuming it would be because there are no other ingredients and garbanzos are probably lower in fat than soy. But consider that even at 49% fat for regular tofu, tofu is so low in calories it really doesn't mean that much, you also combine tofu so often with veggies it "waters down" the percentage of fat. And of course you can get low-fat tofu, I use the full fat variety.

Let us know how it goes, I'd be interested to see what it's like.
