Subject: celiac disease what's gluetin?

My teen was diagnosed w/celiac disease. Dr. has us doing a gluetin free diet to fully verify. I have a lot of questions for anyone w/experience in this area. She had milk allergies, and night shade plant allergies as a toddler, outgrew them, but apparently that all came back w/ a vengance.
I would like to know what exactly gluetin is, why rice is to be avoided, and since I read a little on this board about almond milk, does it contain dairy? (she's lactose intolerant too) Most of all, I would be eternally grateful for some wheat/dairy/gluetin free bread or pasta recipes. Thank you in advance!
