After trying lot of commercial cheeses, including Follow Your Heart, which is probably the best, here's what I found: your tastes change after a while, you find that you really CAN survive without dairy cheese, and homemade cheese is the best. Here are the recipes I found I like the best for different things: For ricotta (substitute for dishes like lasagne) use mashed tofu with chopped parsley, onion powder and garlic powder. For parmesan try the Soymage vegan parmesan, I think it's really good. (the only commercial sub I like) For nachos, maybe pizza (I've learned to prefer my pizza with no cheese, just a drizzle of olive oil) and definitely quesadillas, and also really good for grilled cheeze, (this is also taste-tested on omni children and they like it) use this recipe: Melty Pizza Cheese Blend really well in blender: 1 cup water After blending well place in saucepan, stir over med. heat until thickened. Remove from heat and add: 2 T. water
