Subject: A great cake recipe:

I don't usually visit this board as much as Chef Deb or Bryanna's, but happened to today. It's
too late for the 1st birthday post listed below, but thought maybe it would still be a
welcomed recipe. --doesn't call or eggs or dairy.

This is our tried and true cake that has been used for many special occasions and makes
great cupcakes too.
It's a moist, chocolate cake that gets raves from everyone. I've been asked for the recipe
numerous times. I've seen it under many different names, but when you see "vinegar" in the
ingredient list, you know you've got the right one! :)

Auntie Bonnie's Wacky Cake (from How it all Vegan)

1 1/2 cups Flour 1 cup Dry Sweetener
4 TBS Cocoa or Carob Powder 1 1/2 tsp Vanilla Extract
1 tsp Baking Powder 1 TBS Vinegar
1 tsp Baking Soda 5 TBS Oil
1/2 tsp Salt 1 cup Cold Water

Preheat oven to 325. In a large bowl, stir together the flour, cocoa powder, baking powder,
baking soda, and salt. Add the sweetener, vanilla, vinegar, oil, and water and mix together
gently until "just mixed". Pour into a lightly oiled cake pan and bake for 45-50 minutes.
Test with a fork to see if done, When cooled, ice and serve.
