My little one who is dairy allergic is turning two soon...organic cake and soy ice cream for everyone! I bake with soy milk all the time. I use plain, unsweetened...never thought about using vanilla, but I bet it would taste good. If you don't want to bake from scratch, you can buy organic cake mix and icing. I got mine at whole food, but our local health food store sells it too. You just add soy milk in the cake and use soy butter and soy milk in the frosting.
