Hi Kimberly, You can use soy milk interchangeably with dairy milk in baking and you'll never know the difference. In fact, alot of folks who want to add soy to their diet, but don't want to drink soy milk (as a beverage), do so by using soy milk in lieu of dairy milk in cooking. For a cake, I'd suggest using a vanilla soymilk. Plain would also work just fine. I'd get a "regular" soymilk, as opposed to one of the low fat ones. Happy birthday to your little one!!
