I do not use milk at all. My cream of cauliflower is delicious. I cook a whole head of cauliflower with a medium to large sized red or white potato, salt, garlic, cumin seeds, and olive oil. When cooked, I blend everything in the Vitamix or blender, and serve inmedialtely garnished with chives. It is sooooo creamy. Blessings, Perico
