I don't know if this message is appropriate on this discussion board or not, but I just wanted to say that (1) eliminating dairy products from my diet years ago improved my health in a number of ways and (2) there are so many ways of substituting dairy products in recipes. For example, in a recipe for a potato soup, instead of adding milk, I use a can of white kidney beans (rinsed, drained and pureed). The soup has the same "creamy" texture, but is so much more healthful.
