If you can find it, I live in an area where there aren't many choices but several local stores carry it. It's really really really good, trust me on this.

Other than that, use avocado in sammiches, it's decadent like cheese is. And Jo Stepaniak over at New Veggies has a book has some good recipes, I particularly like the Crock Cheeze recipe which is in Vegan Vittles, it's very very good. You have to experiment with homemade stuff but you should be able to come up with a few options.

The Daiya is the best yet, it melts, good for nachos and things like that.
