First there's a kind of learning curve, then it's just second nature. Instead of cow milk you use soy, almond, (Almond Breeze rocks, by the way) hemp, rice, or other types. Instead of ice cream you buy So Delicious or use rice products (I like soy). Instead of cream cheese and sour cream use the tofutti brands. Cheese is always hardest, but if you do and once you do eliminate it from your diet the cravings will pass. I do believe there is something addicting in cheese (really, truly, it has been proven) because after eight years of not having it I don't miss it at all. But I know people who think they have to have it every day, my mother included,she is absolutely addicted. There are substitutes, but none that great, really, I like real food better, like avocados. You can make really good non-dairy anything, you just have to experiment. And I think Jo Stepaniak's books on alternative cheeses are great, some of those recipes really do help you when you are transitioning from cheese. I'd do it all at once, by the way, there are so many alternatives now there's no reason to keep eating that stuff. The only hard thing will be school -- cheese is on everything. I guess you have to send lunch.
