Hi, this isn't exactly about a recipe, but where better to ask? :-) When I cook my lowfat vegan muffins they taste pretty good fresh but the next day they are quite solid and rubbery instead of bready. There's usually egg replacer and baking powder in the recipes. Is there something simple I'm doing wrong here? Cheers, Jess PS Hi, long time no post everybody...
