Cranberry Pudding

A super-sticky, easy molasses treat. 6 servings.

This is super easy, and one of my favorite ff vegan recipes of all time! Perfect to end a healthy holiday meal. It's texture is similar to a "pudding cake" recipe. To dress it up, serve in a small footed dessert dish and top with a tofu-based whipped cream, vegan "custard," or (my personal favorite) a spoonful of lemon sorbet.

1 cup flour (I use whole wheat or ww pastry)
2 tsp. baking soda
1/2 c. molasses
1/4 c. hot water
2 c. cranberries (either fresh or frozen will work)

Preheat oven to 350 degrees F. Mix all ingredients to make a batter, stirring in berries at the end. Bake in a 9 in. square non-stick pan for approximately 30 min., until brown and set. Cut into squares and transfer to serving dishes, add topping if desired.
