Subject: Recipe: Beans, Hominy, and Tortilla Casserole

The original version of this recipe appears in "How to Cook Everything," by Mark Bittman. It is truly a magnificent book.

BEANS, HOMINY, AND TORTILLA CASSEROLE

Preheat oven to 350 F.

Drain a can of beans (I like pinto or black, but you can use anything) and a can of hominy (white or yellow). Mix together in a bowl.

Slice some tomatoes and some onions.

Open up a jar of taco or enchilada sauce, or your favorite salsa.

Get out the corn tortillas.

Put half the beans/hominy on the bottom of a casserole dish. Top with slices of tomato and onions. Add a little sauce to moisten. Top with tortillas (I staggered 3 tortillas around a 9" round pan). Top with more sauce. Repeat the layers. Make sure that the top layer of tortillas is well-covered with sauce. Bake for 30 minutes or so.

The sauce gets absorbed pretty quickly, so make sure you use plenty of it, so your casserole isn't dry.

Also, I baked mine uncovered. Use your own judgement about this.
