EC AMENDMENT TO DEFINITION OF SRM
During the boning procedure in licensed cutting plants, and in the removal of vertebral column, some of the processes of the vertebrae can be chipped and particles of bone may remain in the meat. As these chips are inconsequential in terms of SRM, European Community TSE Regulations have been amended to take this into account.
