Tofu is good. I make benedict, scrambled tofu and tofu omelettes. All recipes from Bryanna of New Veggies fame. I also love her waffle recipe which uses garbanzo beans, they are really really good and very easy to make and you would never think there were beans in them but they are full of protein because of it.

You probably don't need to be overly concerned with protein, if you are eating a well-balanced variety of plant foods you are most likely getting plenty. Most people get far too much protein. Eat beans, almond or soy milk, lots of veggies & fruits, whole grains for breakfast are also good, kasha, oats.
