Figuring out exactly what to eat is probably the most difficult part of changing one's diet--especially if, like me, you're weren't much of a cook to start off with.

Judging by what you posted, I'd suggest that you limit your nut/nut butter consumption to what would total a maximum of 1 oz of whole nuts per day. Not sure what that is in the world of nut butters, but it's probably not very much. As for olive oil, if you're using more than 1/2 teaspoon/day, it's too much. I'd say that zero oil is about the right amount.

It takes a while to figure out what to eat, how much, etc. There's no reason why you shouldn't be able to achieve the result you're looking for, as long as you remain flexible and willing to try different meal plans, new recipes, etc. Sometimes things we think we can't live without turn out to be the very things we don't miss at all once they're eliminated from our diets. I've had this experience myself--it's freeing.
