I highly recommend "Eat to Live" by Joel Fuhrman, M.D. Fuhrman believes (and I apologize for any inaccuracies here, because I am most decidedly not an expert on this topic or on Fuhrman's work) that the symptoms which are usually referred to as hypoglycemia are actually an expression of what he refers to as "toxic hunger," which is the body's reaction of withdrawal to toxic substances.

Even if you are eating a vegan (or vegetarian) diet, if you are still consuming highly refined grain products, sugar, caffeine and/or alcohol, for some examples, you will continue to experience the symptoms you describe as hypoglycemia. Even if you are not consuming anything like those things, you still may have to further fine-tune your diet by eliminating other foods/food groups. For instance, dried fruit can act pretty much like sugar in some people, and a lot of people can't tolerate a diet that's high in starchy grains and vegetables.

Anyway, it's all much much much better (and more accurately) described in Eat to Live. I highly recommend reading it, and rereading it, and following Dr. Fuhrman's excellent dietary advice.
