place, so i'm going to stop worrying about it.

However, I can't find anywhere a table that estimates
nitrate levels of vegetables. I realize that the
levels can vary depending on how they were grown,
maturity etc, but there must be a range that could be
quoted. I just haven't found it yet. One site I
visited said that arugula is much higher than kale,
but Dr Esselstyn says kale is the champ.

I gather both are good though.
