Subject:         Cooking Kale

I was watching a very interesting video on youtube with dr
esselstyn. In it, he mentioned that to his CVD patients he
prescribes as part of his regiment that they eat 6 fist-sized
cooked servings of kale for the first six months of their
treatment.

Now I've never had a heart attack, but i have had a touch o'
angina, and so I'm trying to choke down 3 good portions a
day. I tried it raw, and decided death was preferable, but
on the advice of my Wife I microwaved a large bowl for 1
minute, and then it became ...okay.

However I have heard that cooking it will destroy the
important nutrients. Any advice on this? I also have a
handful of blueberries now with my cereal.

As an aside, i've read online that acai berries have 10 times
the amount of anti oxidants that kale has.

Any advice on this? I know better than to take a capsule,
but I want to do it right and increase my nitric oxide levels
and reduce free radicals...which I used to think were all on
Shattuck ave near berkely...but you learn something new every
day.
