We need the opinion of Dr. Pinckney, as I still have part of the problem you mention. I went to the nutritionist and she said that it was due to my daily food still had not the amount the calories that I needed (2,200 cal a day). She said that I was eating a lot of fruits to compensate the lack of calories in each meal. Then she gave me the idea of eating more non-fruit food, putting more spoons of rice, beans, vegetables, etc. She went to the point of remembering the lack of calories on veggies!
Sometimes my family, neighbors and my self see the difference in weight before and after vegan. The amazing fact it is that some people in our societies consider fat people healthier than lean people, where I fit now. Even television and movies show fat people more often than years ago. I remember that in my infancy the manufacturer of chocolate milk would run contests to elect the fatter baby as an example of healthy baby.
I also remember when I was fat and with a big belly but failing tread mill and tomography tests.
Bottom line: consider to calculate with all the items that you can list that you eat a day and check if the amount of calories equals of the total calories your height and bone structure needs. You also have an alternative of going to a nutritionist (as I did) and ask he/she to do it and to give you additional details.
My question for Dr Pinckney: do you have a better alternative to what my nutritionist told me: “Then she gave me the idea of eating more non-fruit food, repeating and putting more spoons of rice, beans, vegetables, etc. in each meal”?
