Actually fat free means just that. It has nothing to do with the 'daily value'. A loophole in labeling rules allows one half gram of fat or less per serving to be rounded off to zero grams.
Some products have serving sizes so small that the typical portion is actually many 'servings', raising fat to unacceptable levels.
The reversal program we recommend has a goal pf limiting any meal to 10% of calories from fat.
While we caution against any foods that have added oil, trace amounts such as those in "fat-free" salad dressings are not considered significant.
If they do not include dairy or other animal products, most fat-free salad dressings are acceptable.
A simple rule-of-thumb to keep below 10% calories from fat is to avoid anything that has more than one gram of fat per 100 calories.
