I've made corn chips by putting corn tortillas in the oven - 350 F. for a long as it takes for them to start to turn a slightly darker color, about 5 to 10 minutes. They can either be cut into wedges before baking, or broken into pieces afterwards (scoring the tortilla places where you like them to break helps). You have to watch these carefully, it's only a minute from a perfect chip to a burned piece of tortilla.
I asked the makers of a popular brand of baked corn chips about a home recipe from corn meal and was told that the process was quite complex and required some special equipment.
If anyone has a recipe that they know works, we'd all like to know about it.
