Subject: Which foods are high in soluble fiber?
Date: February 7, 2000 at 1:17 pm PST
Hi. I am getting my chloresterol checked next week; it will be the first check since I became a vegetarian and started living a less stressful and healthier life.
The last check showed it was at 240. I am a thin person, but I was eating mostly fast-foods with no vegetables (unless french fries count ;-) ) I took no exercise and I had an extremely stressful job that required signficant travel.
I am anxious about this blood test, because I am worried it hasn't gone down (it has to have gone down, don't you think?). Can anyone tell me which foods, besides oatmeal, are high in soluble fiber? The foods I eat the most these days are: carrots, lentils, broccoli, walnuts, rice, and alfalfa sprouts. They aren't the only things I eat, but they are the foods I consume almost every day. Are any of these good sources of soluble fiber?
Thanks so much and wish me luck! My family keeps telling me that it's probably my genetic bad luck. I would like to think it's something I can control.
