as is sauerkraut, beer, etc. It is not a mold in and of itself. Being fermented, it digests more easily than unfermented foods.

I don't personally like tempeh in stews and such but I really love it in things like ruebens, (I use a kind of tempeh called "tempeh fake bacon) -- fajitas, barbecued tempeh sammiches.

It's very nutritious and high in protein.
