You don't have to be a HUGE fruit/veg eat as long as you get the minimum number of servings each day (3 for fruit and 5 for veg) and make it varied (don't only eat carrots, apples, bananas). I try to eat atleast one new veg/fruit each week. Definitely eat your beans, grains, nuts, seeds, oils (flax and olive). If you are eating dairy and eggs make sure you get those in too. Get a vegetarian cookbook and go for it. Learn to like your fruits and veg!
